5 Healthy Tips to Kickstart Your 2015

This recipe is PERFECT for Christmas. Loaded with Christmas spices these gingerbread cookies are so scrumptious and you can enjoy them guilt free.

The flour mix is made from oats, coconut and buckwheat flour making this cookie totally gluten totally free. The sweetness comes from the coconut syrup however you can use honey or maple syrup. Teamed with my healthy hot chocolate you will feeling very smug this christmas with these two dishes up your sleeves.

Gingerbread Cookie

150g of oats
40g of desiccated coconut
60g of buckwheat flour
2 tsp of ginger
3/4 tsp of cinnamon
3 tbsp of cold coconut oil
4 tbsp of coconut syrup
1 tsp of vanilla extract
1 pinch of salt

1. Pre-heat the oven to 160 C.
2. Blend the dry ingredients in the food mill, then add in the wet and mix.
3. Present in between 2 baking sheets and with a cookie cutter cut out the shapes.
4. Place in the oven for 20 minutes up until crisp.

Healthy Hot chocolate

250 ml of almond milk
1 tablespoon of raw cacao
1 tsp of cinnamon
1 tbsp of coconut sugar
1 pinch of salt

1. Mix entirely in a pot, bring it nearly to the boil and enjoy.
